Running a restaurant on open fire sounds simple. In reality, you fight wind, drizzle, material fatigue every night — and the memory of burnt stick bread. We solved it.
Why not an open wood fire?
Because a restaurant can't say „not tonight“ every windy evening.
Wood fire is romantic — and unreliable. Wrong wood, damp day, untrained hand: stick bread stays raw or burns black. Doesn't scale in service.
Our fire system is patented because it makes heat predictable. Same browning under sun, drizzle and February wind. Only then can you invite guests.

Build
Three parts, one precise promise.

Glass wind shield
Heat-resistant U-shaped panes frame the embers, block the wind and hold the heat steady. You watch — without taking the wind in your face.

Controlled gas flame
Above 100 °C, predictable. Lights reliably, regulates to constant temperature, no sparks, no blowing.

Stainless steel pan
Catches embers and falling crumbs. Safe for table and clothes, quick to clean, hygienic.
The seven minutes
What happens between dough and table.
We wrap the Knifte or skewer it for you. You take over above the embers, turn it, smell it, listen — and eat.
We wrap & hand it over
Yeasty, cool dough spirals onto the hot stick — or we skewer meat and vegetables for you. You get it ready in your hand.
First browning
You hold the stick over the embers. The outside pulls heat, the marinade starts to scent.
Crackle
You turn, you watch. First crusts crack lightly, the inside turns airy.
From stick to hand
Slide it off the stick, dip it — the filling is already inside. First Knifte ready before you finished thinking.
What the photo doesn't show
A soft crackle. Yeast and beech smoke. Warmth on your face — without the smoke in your eyes.
Hear
A quiet crackle.
No blowing, no flying sparks. Just the calm sound of a controlled ember.
Smell
Marinade, yeast, beech.
